Green Beans with Capers and tarragon

  • 220g green beans
  • 2 tbsp capers
  • 1 lemon
  • 4 sprigs of tarragon
  • ½ tbsp Olive oil
  • Salt

Elevate the humble green bean with this simple side dish.

Method

  1. 1. Bring a heavily salted saucepan of water to the boil while you prepare the green beans by cutting off the stalks. While you do this, heat the oil in a frying pan over a medium heat.
  2. Add the prepared green beans to the boiling water and cook for 2-4 minutes, test them after 2 minutes, you’re looking for them to be slightly darker in colour, but still have some crunch.
  3. While the beans are cooking, add the capers to the frying pan to begin to crisp them.
  4. Drain the beans, and add to the pan with capers before adding the tarragon and zest and juice of the lemon. Season to taste and serve.
