Green Beans with Capers and tarragon

Elevate the humble green bean with this simple side dish.
Method
- 1. Bring a heavily salted saucepan of water to the boil while you prepare the green beans by cutting off the stalks. While you do this, heat the oil in a frying pan over a medium heat.
- Add the prepared green beans to the boiling water and cook for 2-4 minutes, test them after 2 minutes, you’re looking for them to be slightly darker in colour, but still have some crunch.
- While the beans are cooking, add the capers to the frying pan to begin to crisp them.
- Drain the beans, and add to the pan with capers before adding the tarragon and zest and juice of the lemon. Season to taste and serve.
